Cucumber & Onion Salad




This is a super simple recipe that you will make again and again. It is one of our favorites this time of year. I made it as a side for dinner last night. Go ahead and try it, I'm sure that you'll love it!

                All you need are cucumbers, onion, sugar and rice vinegar.


Ingredient List
4-5 small cucumbers (2 or 3 large)
1 onion
½ cup sugar
⅓ cup rice vinegar
salt and pepper


Step 1:

Slice cucumbers and onions very thin.  We use about 4-5 small cucumbers to one large Vidalia onion. 


Step 2:

Pour ½ cup of sugar into ⅓ cup rice vinegar and stir until it dissolves. You can use regular vinegar, but a friend of ours told us about rice vinegar a few years ago. It gives you a little added bite, but isn't over powering.

Step 3:

This is where I salt and pepper my cucumber and onion mixture. Then pour the vinegar mixture over the vegetables, and you're all set.


If there is any leftover, just refrigerate. The mixture does get a little more potent the longer it sits, so I wouldn't let it be refrigerated for any longer than 2 or 3 days.
